Since I am on a bit of a roll about the humane treatment of animals, I guess now is as good a time as any to mention some new ideas in the works. Woodsmith Farm has always felt strongly about animal welfare and a quote from Temple Grandin sums it up.
"I think using animals for food is an ethical thing to do, but we’ve got to do it right. We’ve got to give those animals a decent life and we’ve got to give them a painless death. We owe the animal respect."
Over the next few years we will be determining the feasibility of producing in small scale, very high quality, very happily raised and humanely processed beef, pork, turkey and chicken. Our focus will be on quality and taste and not volume. The breed, age and finishing technique of every animal that we process will be key.
